Skinny French Food Friday - Strwberry Chia seed jam



I have managed to wean French Boyfriend off croissants and he is now having muesli with a dose of  chia seeds every morning.

Last week I made raspberry and chia jam which was a hit with both our guests and FB.
One of this week's guests is diabetic and is not allowed croissants so I normally make him healthy muffins but I am always on the lookout for new and interesting recipes.

Conscious of the fact the jam  is a no no, I decided to make strawberry and chia jam which is delicious and you can really taste the strawberries as it does not contain sugar and instead uses a couple of tablespoons of honey.

So for those of you that love jam but like to watch your waist line this is for you.


Ingredients
strawberries 2 cups, thawed frozen or fresh
chia seeds 3 tablespoons
vanilla essense ½ teaspoon
water 2 tablespoons
sugar or liquid honey 1-2 tablespoons, to taste

Method
Place all ingredients in a small pot and boil over medium heat, stirring frequently, for a few minutes until the strawberries have broken down and mixture slightly thickens.
   
Sweeten to taste with a little more sugar or honey if needed. Store in clean, sterilised jar in the fridge. It will set a little more in the fridge, and will keep for about 2 weeks.
